ORGANIC WINES – The House Cellar

At Gilt in the New York Palace Hotel it’s a treat to watch wine director Patrick Cappiello work his magic, pairing wines with chef Justin Bogle’s otherworldly prix fixe dinners. Luxury Wine tasting happens on Wednesday nights. Cappiello and noted wine importer Joe Dressner pull out the big guns to pair three organic wines with all six courses of Bogle’s matching organic menu. Unfortunately, organic wines doesn’t necessarily mean environmentally friendly. However, the process of conventional winemaking itself is not environmentally friendly.  Carbon dioxide gas is a natural byproduct of the fermentation process, waste water management is a significant concern for wineries, and the various chemicals used for cleaning tanks/equipment, and so on are terrible for our consumption, animals, the oceans, and our soil.
